big ripe avocado
1 tbsp (15 ml) lemon juice
Salt and freshly ground black pepper to taste
1/4 cup (45 ml) cherry tomatoes, diced
2 tbsp (30 ml) red onion, finely chopped
2 tbsp (30 ml) fresh basil, chopped
1 baguette, cut into 1/2-inch slices
2 tbsp (30 ml) olive oil
1 clove garlic, peeled and halved

Directions
Preheat oven to 400°F (200°C).
In a medium bowl, mash avocado with a fork until smooth. Add fresh lemon juice, salt and black pepper and mix well.
In a separate small bowl, combine diced cherry tomatoes, red onion and fresh basil.
Arrange the baguette slices on a baking sheet. Brush each slice with olive oil.
Bake in the preheated oven for 5 to 7 minutes, or until the bread is golden brown and crispy.
Remove the baguette slices from the oven and rub each slice with the halved garlic clove for extra flavor.
Spread a generous amount of the mashed avocado mixture on each slice of toasted baguette.
Top with tomato mixture and drizzle with balsamic glaze if desired.
