For the Wings:
- 2 lbs (900g) chicken wings, split into drumettes & flats
- 1 tbsp baking powder (NOT baking soda—key for crispiness!)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
Sauce Options (Pick One!):
Classic Buffalo:
- ½ cup (120ml) hot sauce (Frank’s RedHot)
- ¼ cup (60g) melted butter
- 1 tbsp honey (optional, for balance)
Honey Garlic:
- ¼ cup (60ml) soy sauce
- ¼ cup (85g) honey
- 3 garlic cloves, minced
- 1 tbsp sriracha (optional, for heat)
Dry Rub (Nashville Hot Style):
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tsp cayenne pepper (adjust to heat preference)
- 1 tsp garlic powder
