Sometimes I go by all the fancy desserts when I visit my local bakery and go straight to the Chocolate Peanut Butter Bars. I just love this three-layer bar with a combination of dark chocolate and peanut butter. The top layer is a shiny and smooth Chocolate Ganache covered with crunchy peanut bits.
Next comes a no-bake Peanut Butter Filling with a creamy smooth texture that’s deliciously light and fluffy. The bottom layer is a soft and grainy Graham Cracker Crust, which contrasts so beautifully with the top two layers’ creaminess. My favorite way to eat these bars is cold from the fridge but at room temperature, and they are great too. These bars are the best for holidays, game days, potlucks, tailgating, and enjoying any time on your dessert table. They ‘re perfect for gifting as well, and vanish faster than you ever imagined! We enjoy doing them on camping trips in the RV, too.
Ingredients:
1 cup butter, softened
1 cup white sugar
1 cup brown sugar
(2) eggs
¾ cup peanut butter
2 cups rolled oats
2 cups all-purpose flour
1 tsp baking soda
2 ½ cups semisweet chocolate chips
½ cup peanut butter
Directions:
Preheat oven at about 175 degrees C (350 degrees F). Grease a baking pan measuring 9×13 inches.
Add and cream the butter, white sugar, and brown sugar together in a bowl. Beat in the eggs, one at a time, then stir in peanut butter for 3/4 cups. Stir in the creamed mixture until well blended, combine the oats, flour, and baking soda; Equally, press the dough into the prepared pan.
In a preheated oven, bake it for 15 to 20 minutes, until solid. Add and melt chocolate chips and 1/2 cup peanut butter together in the microwave or over a double boiler, stirring frequently up to smooth. Spread over cooled bars and allow to set in squares before cutting.
