Parmesan-Crusted Fried Zucchini is a savory taste of parmesan and zucchini bites. They quickly become a favorite for a snack, appetizer, or side dish that’s simple and crowd-pleasing. My family knows that zucchini is one of my favorite summer sides, as there are so many different ways of cooking it. This crispy version of parmesan has to be one of my best releases so far. On the outside, the crunch of a plain panko breading and on the inside the tender zucchini taste so sweet. You ‘re not going to be able to eat just one. They’re so amazing you ‘re going to keep looking for more.
Just because something is fried doesn’t mean heavy and oily taste is required. In this recipe, the bread crumbs give a light and airy crunch to the outside of the zucchini, and the seasonings, keep the flavor fresh. Every bite in this fried zucchini has a crispy texture, and the flavor of Parmesan is addictive. Serve as an appetizer, snack or side dish and in no time will this become a family favorite
Ingredients:
½ cup Italian seasoned bread crumbs
½ cup grated Parmesan cheese
2 tsp garlic powder
1 tsp dried parsley
(1) pinch ground black pepper
(3) zucchinis, sliced
(2) eggs, beaten
1 cup vegetable oil for frying
1 tbsp grated Parmesan cheese
(1) pinch salt to taste
Directions:
Add and mix bread crumbs, 1/2 cup Parmesan cheese, garlic powder, parsley, and black pepper in a bowl. Dip zucchini slices into eggs, then press into bread crumb mixture, shaking off excess. Place the breaded zucchini onto a plate while breading the rest; do not stack.
Heat over medium heat the vegetable oil in a large skillet. Fry breaded zucchini in hot oil in batches until golden brown, about 3 minutes; transfer to a paper towel-lined plate. Sprinkle with a tbsp of Parmesan cheese and salt.
