Ingredients:
• 2 cups fresh pineapple (diced)
• 1 large English cucumber (sliced or chopped)
• 1 small jalapeño (minced, seeds removed for less heat)
• 1/4 small red onion (thinly sliced)
• 1/4 cup fresh cilantro (chopped)
• 1/4 cup feta cheese (crumbled)
• 2 tbsp fresh lime juice
• 1 tbsp honey or maple syrup
• 1 tbsp olive oil
• 1/2 tsp red pepper flakes
• 1/4 tsp black pepper
• 1/2 tsp salt
Directions:
1. In a large bowl, combine the pineapple, cucumber, jalapeño, red onion, and cilantro.
2. In a small bowl, whisk together lime juice, honey (or maple syrup), olive oil, salt, black pepper, and red pepper flakes.
3. Pour the dressing over the salad and toss gently to coat.
4. Sprinkle crumbled feta over the top before serving.
5. Chill for 10–15 minutes before serving for best flavor.
