Instructions:
Stir together mayonnaise, onion, ketchup, relish, mustard, vinegar, and paprika in a small bowl. Mix until smooth. Cover and pop it into the fridge until you’re ready to use. Letting it sit ahead of time makes the flavors even better!
Place a big skillet on medium-high heat. Toss in the ground beef and break it into smaller pieces with a spoon or spatula as it cooks. Keep stirring and cooking until every bit of beef is browned, which takes about 5-7 minutes.
Pour out any excess grease from the skillet. Put it back on the heat and mix in the salt, pepper, garlic powder, and Worcestershire sauce. Stir everything together to coat the meat with spices. Take off the heat once mixed evenly.
Spread out the tortillas on your prep surface. On one side of each, lay down 2 cheese slices. Divide the seasoned beef evenly across the tortillas on top of the cheese. Sprinkle onions and pickles over the beef, then finish with 2 more slices of cheese per tortilla. Fold the tortillas in half to make a half-circle shape.
Use the same pan from the beef or grab a clean one. Heat it up on medium-high, add a bit of olive oil, and let it get hot. Put a quesadilla in the pan and cook until crispy and golden on one side, around 2-3 minutes. Flip and do the same on the other side. You might need to go in batches.
Take the quesadillas out and let them rest on a cutting board for about a minute. Use a knife or pizza cutter to cut each one into 2-3 triangles. Serve right away with the burger sauce for dipping.
