Chicken Bell Pepper Ranch Burritos

 Ingredients:

  1. 2 cups cooked chicken, shredded

  2. 1 cup bell peppers, chopped (any colors you like)

  3. 1/2 cup ranch dressing

  4. 1 cup cheese (cheddar or your favorite)

  5. 4 large flour tortillas

  6. 1 can black beans, drained (optional)

  7. 1/2 cup corn (optional)

  8. Salt and pepper to taste


Directions:

  1. In a large bowl, combine the shredded chicken, chopped bell peppers, ranch dressing, and cheese. If you’re using black beans and corn, add those too. Season with salt and pepper.

  2. Warm the tortillas in a pan or microwave for a few seconds so they’re easier to roll.

  3. Take a tortilla and place a generous amount of the chicken mixture in the center.

  4. Fold in the sides of the tortilla and roll it up tightly to form a burrito.

  5. Repeat with the remaining tortillas and filling.

  6. If you like, you can place the burritos seam-side down in a baking dish.

  7. Optional: Top with extra cheese and bake at 350°F (175°C) for about 10 minutes, or until the cheese is melted.
