Mediterranean Salmon Patties

Crispy, flavorful salmon patties packed with Mediterranean herbs and feta—perfect for a light and delicious meal!

Ingredients

For the Patties:

2 cans (6 oz each) salmon, drained and flaked

1 cup fresh spinach, finely chopped (or ½ cup thawed, drained frozen spinach)

¼ cup red onion, finely chopped

2 cloves garlic, minced

⅓ cup feta cheese, crumbled

½ cup breadcrumbs (panko or regular)

2 large eggs, beaten

2 tbsp fresh parsley, chopped

1 tbsp fresh dill (optional)

1 tbsp lemon juice

1 tsp lemon zest

1 tsp dried oregano

Salt and pepper, to taste

For Frying:

Olive oil

Optional Garnish:

Lemon wedges

Tzatziki sauce

Prepare the Salmon
Drain the salmon and remove any bones or skin if desired. Flake it with a fork in a large bowl.

Sauté the Spinach
Cook spinach in a dry pan over medium heat for 2 minutes until wilted. Let it cool, then squeeze out excess moisture.

Mix Everything
Add spinach, red onion, garlic, feta, breadcrumbs, eggs, parsley, dill, lemon juice, zest, oregano, salt, and pepper to the salmon. Mix well.

Shape the Patties
Form the mixture into 6–8 patties, about 3 inches wide.

Cook Until Golden
Heat olive oil in a pan over medium heat. Cook patties for 3–4 minutes per side until crispy and golden brown. Drain on paper towels.

Serve
Enjoy with lemon wedges, tzatziki sauce, or a fresh salad!
