Baked Cottage Cheese Eggs

 Ingredients:
– 1 cup cottage cheese
– 4 large eggs
– 1/2 cup shredded cheese (like cheddar or mozzarella)
– 1/4 cup chopped green onions or chives (optional)
– Salt and pepper to taste
– Optional: diced vegetables (like bell peppers, spinach, or tomatoes) for added flavor

Directions

1. Preheat the Oven:
– Preheat your oven to 375°F (190°C) and grease a baking dish (about 8×8 inches) with cooking spray or a little olive oil.
2. Mix Ingredients:
– In a mixing bowl, combine the cottage cheese, eggs, shredded cheese, and chopped green onions (if using). Season with salt and pepper. If you’re adding vegetables, mix them in as well.
3. Pour into Baking Dish:
– Pour the mixture into the greased baking dish, spreading it evenly.
4. Bake:
– Bake in the preheated oven for about 25-30 minutes, or until the eggs are set and the top is lightly golden.
5. Cool and Serve:
– Once done, remove from the oven and let it cool for a few minutes. Cut into squares and serve warm.
